‘Fortune favours the bold’ is a great maxim for life in general, but it’s also one that you can – and should – take into the kitchen. There may be recipes here that sound wild. There may be ingredients you’ve never used before, or flavours that you would never have thought go together. 

The way I cook has always been haphazard. I’m a culinary nomad, but I’ve long been inspired by BIG flavours. Born into an Indian family in the North of England, I learnt to cook our traditional dishes at a young age; I married a Hungarian and discovered the delights of Eastern European cooking; I’ve travelled the world and expanded my flavour horizons. I have learnt that the contents of a rather empty fridge or barren cupboard coupled with a mad dash to the nearest corner shop can still yield a meal of interest and substance.

These recipes all have one thing in common. They all have an element that takes them beyond the familiar. As well as some exciting dishes picked up on my travels, I have developed new versions of old classics, each with a surprising twist. A chicken burger is given a Crunchy Nut makeover and a spicy mayo; a sweet fruity pavlova is accompanied by a savoury herbal drizzle that will blow your mind. 

I want to show you that a little thinking outside the box in the way ingredients are combined can change how you cook for ever.
