As a twist on a bellini, I use Wild Idol Alcohol-Free Sparkling White. It’s made using Müller-Thurgau grapes grown in south-west Germany but it doesn’t go through the fermentation process, so it is naturally alcohol free. If you are using a full-sized bottle, you will have enough for 5-6 servings. You can, of course, make this with any sparkling wine.

Ingredients
- 60g strawberries
- 250ml cava, prosecco, Champagne, or an alcohol-free sparkling wine alternative, chilled
To serve
- 1 strawberry, hulled and halved
Method
- Whizz the hulled strawberries in a blender until smooth. Pour into a container, cover and chill for at least 20 minutes. At the same time, put 2 Champagne glasses into the fridge.
- Put 1 tbsp of the strawberry purée into each of the glasses and carefully top up with the wine, stirring as you pour to prevent it fizzing over.
- Garnish with the strawberry.
