Sugar syrup is available to buy in bottles, but if you want to make a simple syrup for this classic cocktail of gin and champagne with a dash of lemon, just combine equal volumes of granulated sugar and boiling water and stir to dissolve. You can add a couple of broad strips of lemon rind, especially nice for this cocktail. Leave to cool then strain.

Ingredients

  • 45ml gin
  • 10ml freshly squeezed lemon juice
  • 5ml sugar syrup (shop-bought or home-made, or just use a scant tsp caster sugar)
  • Chilled champagne, to top up

Method

  1. Shake the gin, lemon juice and sugar syrup (or sugar) in a cocktail shaker with ice.
  2. Strain into a champagne flute and top with champagne, adding it slowly.
