Mackerel isn’t as plentiful as it was when I was a kid. Back in the 1970s, I’d usually catch a carrier bag’s worth in an hour. These days, when I go out on my boat, I struggle to get half a dozen or so, but that makes them even more special.

Mackerel is one of the most versatile and delicious fish, whether cooked whole or eaten raw. These dishes were made aboard the Hix Fix with mackerel straight from the sea, and cooked on my trusty portable Cobb barbecue.

For me, there’s no better way to enjoy fish than catching and cooking it yourself. If you aren’t so lucky, try to buy from a reputable fishmonger who can also prepare it for you.
