Having a repertoire of savoury and sweet tart recipes up your sleeve for warm-weather picnics, car journeys or summer lunches will prove handy over the coming months, and I’m sharing my favourites here. 

Over the years I’ve accrued quite a collection of tins – even mounting a set of vintage ones in a frame with some old chocolate moulds – so I like to turn out large round tarts, long rectangular ones or smaller individual numbers depending on the occasion (but always plump for tins with removable bases for ease; fixed-based versions are a pain when it comes to turning out).

Use shop-bought pastry if preferred, even in recipes where I’ve made it from scratch, but never throw away the trimmings; freeze puff-pastry offcuts to make mini tarts next time, or knead grated cheese and chopped nuts into leftover shortcrust (rolling it out and stamping out shapes) to bake into biscuits. There’s plenty of potential when tarts are involved.
